As long as you’ve got a bag of plain white sugar in the pantry, you’ll never run out of icing sugar again – and you’ll cut down on packaging too. The Thermomix sounds like a jet engine while it blitzes, but it’s done in under a minute.

Thermomix Icing Sugar Tips

Types of Sugar: I use Homebrand regular white sugar – it’s cheaper than caster sugar. I don’t recommend brown sugar as the molasses make it sticky and more likely to clump. You can mill raw sugar and coconut sugar, but the texture might be courser than regular white sugar.

How to Avoid a Sugar Dust Cloud: After milling the sugar, let it settle for a good few seconds before slowly opening the lid.

Grainy Texture: To avoid a gritty texture, don’t mill more than 250g of white sugar at a time, and mill for at least 50 seconds on speed 9.

Storage

The icing sugar may feel slightly warm after milling. Let it cool completely, then store it in an airtight container to prevent clumping. Sieve before using for best results.

Frequently Asked Questions

No, cornflour is sometimes added to store-bought icing sugar to prevent it from clumping. See above storage tips and sieve the icing sugar before use for the best results.

If the texture of your icing sugar is not to your liking, just mill again in 30 second increments.

For best results, mill no more than 250g at a time. It’s quick to repeat if you need a larger amount.
