Icing Sugar Tips
Types Of Sugar: I use Homebrand regular white sugar - it's cheaper than caster sugar. I don't recommend brown sugar as the molasses make it sticky and more likely to clump. You can mill raw sugar and coconut sugar, but the texture may be courser than regular white sugar.
How To Avoid A Sugar Dust Cloud: After milling the sugar, let it settle for a good few seconds before slowly opening the lid.
Grainy Texture: To avoid a gritty texture, don't mill more than 250g of white sugar at a time, and mill for at least 50 seconds on speed 10.
Storage
The icing sugar may feel slightly warm after milling. Let it cool completely, then store it in an airtight container to prevent clumping. Sieve before using for best results.

Homemade Icing Sugar in the Thermomix

- Add the sugar to the Thermomix bowl and mill for 20 seconds on speed 10. Let the fine sugar settle briefly before opening the lid. Scrape down the sides with a spatula, then mill again for 30 seconds on speed 10.
- After milling, the icing sugar may be slightly warm. Let it cool thoroughly before storing it in an airtight container to avoid clumping. Sieve the icing sugar before using for best results.
