This recipe delivers a creamy, thick consistency with no grainy texture or lumps. Although it costs a bit more than supermarket Homebrands, it's still cheaper than Nestlé, and is a handy emergency backup if you run out.

Notes on the key ingredients:
- Milk Powder: I've tested this recipe with Woolworths Homebrand and Devondale milk powder. I haven’t tested this recipe with lite milk powder, as many sweet recipes call for full-cream sweetened condensed milk.
- White Sugar: I recommend using white sugar only - either caster or granulated sugar.
- Unsalted Butter: I always use unsalted butter in sweet recipes so I can control the amount of added salt.

- Step 1: Add the milk powder, sugar and salt to the Thermomix bowl and mix for 3 seconds on speed 5.

- Add the butter and water.

- Step 3: Cook for 10 minutes, 90℃, speed 3. Place the simmering basket or splatter guard on top of the Thermomix bowl instead of the measuring cup.

- Step 4: Pour the sweetened condensed milk into a container and leave it on the bench top to cool for 20 minutes before storing it in the fridge. See storage notes below.
Sweetened Condensed Milk Tips
Consistency: The sweetened condensed milk will be runny (like custard) just after it has been made but will thicken considerately upon cooling.
Quick Clean Up: Wash the Thermomix bowl immediately after use, to prevent the mixture from sticking. If it does stick, I find that a little bicarb soda mixed with washing up liquid does the trick.
Uses: This homemade sweetened condensed milk can be used as a replacement for tinned sweetened condensed milk in any recipe. Allow it to cool completely before using it in your recipe.
Storage
The sweetened condensed milk will keep for up to 2 weeks in the fridge stored in an airtight container or jar. The mixture will separate slightly, so stir well before using.
If you have any leftover, it can be stored in the freezer for up to 3 months. Thaw in the fridge overnight and stir well before using.

Thermomix Sweetened Condensed Milk
Ingredients
- 160 g full-fat milk powder
- 160 g white sugar
- ⅛ teaspoon salt
- 60 g unsalted butter
- 100 g water
Instructions
- Add the milk powder, sugar and salt to the Thermomix bowl. Mix for 3 sec/speed 5 to combine. Scrape down the sides of the mixing bowl with a spatula.
